Easter is a wonderful holiday, especially for those that love hard boiled eggs.

As a kid, my favorite way to eat them was to just peel them, add a little salt and chow down.

As an adult, I struggled to find new ways to use all the extra eggs each year.

Here are some fresh takes on some of the basics, as well as a few new things you might like to try.

To begin, try not to overcook your eggs. They will be fine to eat, but the yolks will turn green or grey when overcooked, and that might spoil the look of your recipe. Most chefs recommend cooking for 10 minutes to give a soft center to the yolk. For completely firm yolks, cook an additional minute.

Deviled Eggs are wonderful, even with a basic recipe. But, have you thought of dressing them up a bit? Some folks like to use a favorite mustard, or other favorite spices. Here is a recipe you might like:

You can never go wrong with classic deviled eggs. They’re a safe choice for just about any party. But it’s also true that everything is better with bacon—especially when it’s maple-glazed bacon. To make it, simply pan fry bacon strips and brush (real) maple syrup after flipping. This goes into the yolk and mayo filling and on top. Go all out, ya know? 

Egg Salad, Potato Salad, and Macaroni Salad are also family favorites, but these also can be dressed up for new ways to try them. Don’t forget to add Bacon, Lettuce and tomatoes for a terrific Egg Salad BLT.
